It's holiday season and that means there is much cooking going on in my household. Today I bring you a Holiday menu featuring my grilled standing rib roast as well as several recipes from my blogger friends. Let's put together a great holiday meal.

What is the best way to cook a Prime Rib Roast?

There are many ways to cook a prime rib roast but my favorite is on the grill. I also love the fact that grilling is my husband's favorite way of cooking. Anytime I can get him to cook is a bonus as I will have more time to spend on appetizers, side dishes and desserts. It also means plenty of extra room in my oven for other dishes.

Steps to Grilling this Prime Rib Roast

  1. Buy a roast from your butcher or supermarket. Plan on at least ½ to 1 pound per person. A roast with 2 rib bones should feed 4 people, 3 bone is for 6 people and 4 bone is for 8 people.
  2. Let the roast sit out for 30 to 60 minutes so that it comes to room temperature. Rub the roast with some olive oil and your favorite seasonings. I like to use my favorite HOMEMADE BEEF SEASONING. This contains kosher salt, pepper, garlic powder, paprika, onion powder and oregano.
  3. Get your grill hot to about 350 degrees. Cook the roast bone side down on indirect heat for about 15 minutes per pound. Roast is done when a meat thermometer placed inside the meat reads 125 degrees for rare, 130 for medium and 140 for well done.
  4. Let the roast rest (tented with foil) for 15 minutes before slicing. Remember that the roast will continue to cook while resting.
  5. Remove the bones by slicing along the ribs to remove them. Separate each rib and put them aside. Slice the roast in the same direction as the ribs. Serve on a platter with the ribs.

Grilled Prime Rib Roast Tips and Tricks

  • Buy a roast when it is on sale. This will save you lots of money and prime rib roasts are often on sale during the holiday season. If you freeze the rib roast, here are some tips from Prepared Cooks for defrosting it.
  • A prime rib roast does not actually have to be a prime grade of meat. The beef roast is cut from the primal ribs and you can get a choice cut in the grocery store too. Sometimes this roast is also called a standing rib roast just a rib roast. The choice cut will be less marbled and cheaper but still delicious.
  • Trim any extra fat off the roast. You do want some fat but not an overabundance.
  • A digital meat thermometer is best for grilling meat.

Grilled Prime Rib Roast

  • 5 to 7 lb rib roast (with 2 to 3 bones)
  • 2 tablespoon olive oil
  • 3 tablespoon your favorite meat seasoning
  • salt and pepper to taste

  • Heat up half of your gas grill to about 350 degrees. Place the roast bone side down on indirect heat meaning place it where it is not turned on. Cook the roast for about 15 minutes per pound. Roast is done when a meat thermometer placed inside the meat reads 125 degrees for rare, 130 for medium and 140 for well done.

  • Remove the roast to a platter and tent some foil over it. Let it rest for 15 minutes.

  • Remove the bones by slicing along the ribs to remove them. Separate each rib and put them aside. Slice the roast in the same direction as the ribs. Serve on a platter with the ribs.
